A Yolk You Can Lift: Hen Houses and Egg Tests
Master Cho Han-kyu, interpreted by Kim Chang, Founder of Korean Natural Farming (Janong)
Spoken in Korean. Translated to English and checked line by line.
It's past 9 pm and Cho keeps going through his poultry slides: soil floors and dust baths, Korea's pesticide eggs, the hen that roosts highest, broody cages, dark laying boxes and rice hulls. He shows home-made feed, pig feed from broiler litter, and how to test an egg: lift the yolk, look for three layers, pull it with a toothpick. Then blood spots, red paper against pecking, dissected birds and darker yolks from purple sweet potato.
What they found
How does Cho keep laying hens calm and clean, feed them cheaply, and tell a good egg from a bad one?
Late Friday evening; the interpreter and the room are tired and Cho carries on. Slides: hens on a soil floor, a broody cage, curtained laying boxes, chopped greens, a four-photo feed slide (sweet potato vine, culled sweet potatoes, red clay, IMO4), sifted broiler litter, a yolk lifted by fingers and chopsticks (2:46), dissected birds, a KBS1 stress-hormone chart (9배), and yolk colours.
- Breaking a broody hen — Put her in a wire cage inside the coop, where she can see the flock, until the habit passes; feed her lots of protein (Cho: meat) and it goes fast. Don't put her outside: brought back, the others peck her to death.
- Home-made poultry feed — Sweet potato vines + sweet potatoes too poor to sell + red clay + IMO4, mixed and fed. No ratios given.
- Fermented greens — Give greens fermented, not raw, for more nutritional value. How to ferment them was put off for lack of time.
- Pig feed from broiler litter — After the broilers ship, sift the floor litter: the straw stays on top, the droppings fall through. Add IMO4, lactic acid bacteria (LAB) and yeast, and ferment once more. No ratios given.
- Stopping hens pecking a bleeding hen — Cut red paper and scatter it on the floor; with so much red around they don't peck at her vent. The keeper wears green trousers, never a skirt.
-
On a soil floor the droppings break down and the hens dust-bathe
The floor stays soft.

- Cho also says conventional eggs and vegetables carry pesticide that harms children's health, and that weak-yolk eggs hold 'poison, not protein'; these were not tested here and we don't repeat them as advice.
- The stress-hormone figure comes from a TV documentary slide; how it was measured isn't shown.
- No ratios are given for the home-made feed, the fermented greens or the litter feed.
- One pass heard Cho say hens do not like red; the interpreter said they like it. Either way, red excites them.
- Keep a soil floor with rice hulls or straw; the hens dust-bathe and the eggs stay clean.
- Cage a broody hen inside the coop, not outside, and feed her protein.
- Darken laying boxes, and don't startle hens before they lay.
- Ferment greens before feeding; turn sifted broiler litter into pig feed with IMO4, LAB and yeast.
- Check your eggs: lift the yolk, look for three layers, try a toothpick.
- Keep red paper on hand for a bleeding hen; wear green in the coop.

English translation, checked against the Korean as spoken.
2:30:16 So this floor is a soil floor, and [as the droppings break down] they take sand baths there. Also our floor is soil and all the waste breaks down. So the floor is very soft. And so they are doing bathing on their floor. Right now in Korea... Pesticide eggs turned up among the big companies' eggs. Pesticide got inside the eggs. Oh, in the store they sell this egg, there is already pesticide, some kind of poison is in the egg, the regular egg.
2:31:12 Because they raise them shut in [cages], mites get on their bodies. To keep the mites off, they put pesticide in the feed. In the conventional way, when they are in the cage, so they have all this bug problem, mites, etc. To kill those bugs, they put the poison in their food. So, we need to finish. His wife keeps saying, finish it, finish it. But he keeps going. I have to obey that. What time is it? 9:15. I'm tired. Yeah, we have to tell them.
2:31:58 Make it our fault. Tell them we're all tired or something. Yeah. Everybody just go to bed right now. Yeah. Just tell them we've had too much, we can't keep up. Our brains are tired. I am tired. My brain's tired. I had the same problem with...
2:32:45 I'm always ready to come. There's more. But now... There's more. Just three [more] points. But now it's not only eggs that have pesticide in them. Tomatoes, cucumbers, all of it has pesticide in it. Not only eggs, but tomatoes and all kinds of crops grown the conventional way, it has a poison. In Japan now, more than 80% [of tomatoes have pesticide in them]. So in Japan, 80% of tomato has a pesticide in there.
2:33:36 So even in Hawaii, who grow this tomato in a conventional way, there is a poison in there. [So housewives are scared when they buy food.] So the housewives get scared so they cannot buy those kind of food. So to prevent that, the woman should rise and make a demonstration. I think before next year comes, this year something like that will happen. You'll see. Before next year comes, that will [happen].
2:34:39 Because of they are using so much chemical, even the cabbage, Chinese cabbage, you cannot eat that anymore. He is saying, soon there is a very bad food shortage. We... our food runs short? Oh! Hold on a minute. There is a huge pollution is going to happen. It is on the way. That is a big problem.
2:35:26 Because if you [don't] change this soon, the children who are growing right now, they will have a terrible health problem. [Unclear] ... the children's health ... So you guys be bright and then stand up. Rise. [He says] if you're tired, go and rest.
2:36:15 What's the matter? What is it? These chickens, you know, they give recognition to the one who works well. So when they go to sleep, does the one that worked hard [sit up high or down low]?
2:37:04 So, the one who works hard, are they perching in the highest place or the lowest place? So the ones that sleep in the highest place, they produce the most eggs. Chickens like to go up high. And the hen that goes up high is the hen that lays the most eggs. Because it works hard, they treat it with respect and send it up top. So the low-rank chickens will send them up to the higher perching area. Chickens know how to honor the one that works hard, but people treat the one who works hard as lesser. Even the chicken knows how to respect the person who works so hard, but the human is
2:38:01 the other way. The ones who work hard, they look down. The prime example is Korea: the National Assembly members. And the most good example is the Korean congressman. So the ones who only talk a lot and lie around [go up to the high seats]. So in Korea, the ones who only talk and they don't really work, they go to a higher position somehow. [Unclear] The ones who should be at the very bottom come up on top. Yeah, so they are supposed to sweep away at the bottom, but they are the ones who go on top and then sweep up there.
2:38:46 So when you do natural farming in Hawaiʻi, don't show off. Let's do it from a humble place. So when you do natural farming, don't be an arrogant person. Be humble and continue work, spread this natural farming. Please develop this natural farming. Why did we put them here, in a wire cage? They have the habit of brooding, sitting on eggs. They have that habit, and if you just leave them be...
2:39:32 The hens sit on the eggs that were laid and hug them close, so you have to isolate them. You have to isolate them, but you can't put them outside. [When you put them back] the others peck them from behind and kill them, fighting. So you keep them in here where you can see them, and when [the habit has passed] you let them down. Because some hens, they like to sit on the egg. So they want to prevent them. But we cannot take them outside of the coop. If we take them out of the coop and put them back, they start to bully. So they will stop sitting action.
2:40:17 So until they finish their sitting, then they let them out. That's why they have a cage. That's to break the cycle of sitting. Yeah, the brooding. Chicken jail. You don't want, because this place, they sell the egg, so they cannot sit on it. So you put them in here and feed them lots of protein. If you feed the hen meat, the brooding habit goes away fast. So in that case, give them extra protein, and they will not sit on it. This is the laying box.
2:41:04 That's the egg laying box. When the chicken lays eggs, they try to put their feet on it. So the chicken doesn't like when they lay eggs, they don't like bright lights. So we covered it with this cloth to make it a little dark. That's why we put the dark color of a curtain, make it dark inside. So they lay in comfort and are less stressed. So when they lay eggs, they feel comfortable. That's why we're using that. Next. So they laid lots of eggs in the egg laying box.
2:41:57 And we laid rice hulls on this floor. So on the floor, you put the rice hull. That way the eggs are clean, so you don't need to wash them. Chickens eat a lot of greens. They eat greens endlessly. But rather than giving the greens raw like this, you have to give fermented greens. That has much more nutritional value. So even that greens, you need to ferment, and then their nutrient values go up, so it's way better feed.
2:42:49 How do you do that? How do you do that? How do you ferment it? There's no time to talk about that now. There's a poultry [specialist] too, so if people come and even do the hands-on practice, that would be just right. Because we don't have time right now, I cannot talk to you about it. So if you guys gather about 30 people who want to run poultry, he will come back and then he will do the hands-on classes. Around April next year a poultry specialist from Korea will come again, so come then. So I'm planning to have advanced poultry classes in Korea around April.
2:43:37 So if you want to learn, then come to Korea. So this is how someone makes feed at home. These are sweet potato vines, sweet potatoes we couldn't sell, this is red clay, and this is [IMO4]. You mix them like this, make feed, and feed it. So this is what we use for their feed. The potato vine, also the ones that we cannot sell, those sweet potatoes, and the red soil, and the IMO4, we mix all together and they became a feed.
2:44:23 This floor is after we harvest the chicken, after they exit, that's the floor. This is the floor after the broilers were raised and shipped out. You take this and sift it [through a coarse sieve]... Then [the straw stays on top] and the droppings all fall through. To the droppings that fell through, add IMO4, add lactic acid bacteria, add yeast, and [ferment it] once more.
2:45:17 You shake it, put it on the mat, you shake it and then all the straws are going to leave on top and all the nitrogen is going to be [boiled] down. Then you add IMO4, lactic acid bacteria and yeast and you mix it and then it became your pig's feed. So what you make this way you don't give to others ... [unclear]. So in pig's case, you just use their floor in this way. You don't have to buy pig feed. That is excellent pig feed. Next.
2:46:02 Even if you pick up this yolk, it doesn't break. The natural farming egg, even if you hold the yolk with the hand, it doesn't break. Even if you pick it up with chopsticks, it doesn't break. Even you use chopsticks and hold the egg yolk, it doesn't break. So if you can't tell whether an egg is good or bad, crack it onto a plate. Then it has three layers. Here a white layer, and then another, higher layer. The yolk [should stand up]; that's a good one. So if you want to find out that egg is healthy egg, you can see three layers.
2:46:49 There is a very thin liquid, you can see, but then there's another layer of the white, and your egg yolk stands out, it's not flat. It has to be a three-layer egg to be good. So when you see the three layers of egg formation, that is a good egg. This is the way to check whether an egg is fresh. Look now. Toothpick. Toothpick. Take a toothpick, stick it in here, and pull. It has to come along like this. There is another way to find out if this is a healthy egg or not. Use toothpick. Put it in here. You can pull this egg around.
2:47:40 And the eggs sold in the market now all break as soon as you stick it in. And if you put the toothpick, it just, before you go forward, it just breaks down. Eating that kind of egg and saying you've had an egg is the same as filling up on water. If you eat those kind of unhealthy eggs and you feel full, it's like only drinking water. Oh, because the yellow yolk breaks very easily, do not eat that egg. Eggs that break this easily, you must not eat.
2:48:30 So eggs like that don't have protein in them; they have poison in them. There is no protein, it has a toxic, very toxic. And when you buy eggs, sometimes you'll notice blood drops mixed in here, right? Do you ever see when you bought the egg and you crack it open, you see some blood spot on the white Yeah. It happened because the mother chicken was surprised before laying the egg. The reason is, before the mama chicken gave her egg, the chicken had some kind of shock. That's why it has a blood spot on it. It happened because the hen got startled before laying the egg.
2:49:27 The reason is, say a dog passed by the coop, or some [animal] kept coming and going; the hens get startled. Or the keeper went in wearing a skirt. When the skirt flutters, they think a hawk has come. So they got startled and the blood formed. Because if they saw the dog running around the chicken coop, or if they saw a mongoose, or a woman goes in with a skirt, the skirt is kind of moving, they think there's a hawk near, so that's why they get shocked, so they have one of those blood spots. But chickens [don't] like red.
2:50:17 If the keeper comes in wearing a red skirt, the chickens get excited. So because they like the red color, they believe that who is taking care of chicken, if they wear the red clothes and [go] in the chicken coop, they get excited. Because they get excited, when they lay the egg... Because they get excited — when she lays the egg, the [inside of the vent] turns out, as the egg comes. There's a little bump then. Oh, so when, when chicken give birth to the egg, sometimes their ovary is turned, Blood just pours out. Once she bleeds, next thing she's dead — the hens beside her all peck her.
2:51:14 turn, open, and then turn, and then something is broken and it has a lot of blood come out. And when other chickens saw that, they started to come peck, peck, peck on their [vent], and then chickens are dying. And [the hen dies?]. Once that kind of [habit] starts, you have to put it right fast, don't you? So to take care of that problem, you cut the red paper and then put it on the floor. What you do then: cut up colored paper, red colored paper, and scatter it on the floor, and because there's so much red around, they don't peck at the hen's vent.
2:51:58 There's that method too. And the person who raises the chickens, the keeper, Then they don't see their blood there, opening, so they peck on the floor. So who is taking care of chicken should wear green color pants, they like the green color, as for [pants] — chickens like green [pants] best. Do not wear a skirt. Next. So, this one, chicken has lots of brown rice. Chickens fed brown rice — their intestines are this long.
2:52:45 That's why their intestine is so long. But compound feed is very rich, so there'd be a lot of fat. This one is the conventional, they [buy] feed and they feed. If you feed them, there's lots of fat. Because the intestines are long, digestion takes longer, so this gizzard is big. Because in natural farming chicken, their intestine is so long, their nutrient is going to their body. So their sandbox, the gizzard, gets really big.
2:53:32 And isn't this one small? Isn't it caked in fat? Look at that conventional chicken gizzard. It's small and lots of fat is surrounded. So this is what's called fatty liver. Fatty liver. That is the fat... ? Oh, that is fatty liver. Liver — what's that? Liver. It has a fatty liver. When you became lots of fat, their liver swell. When it gets like this, the liver swells. So, people, if you are greedy and greedy, and then those kind of people, we say his liver is swollen. So when a person turns nasty-tempered, or gets very greedy,
2:54:19 we say his liver has come out of his belly. I think it's a Korean saying. That makes sense to you? Is it the same anywhere, even in Hawaii? Do you understand what I'm saying? Even in Hawaii some people their liver come out and swell. 12. Just go over there.
2:55:04 So this is the one raised by Natural Farming — its gizzard, the gizzard that digests the feed, is very big, and this one, from the cage farm — its liver is packed solid with fat. So the natural farming gizzard is really big and the conventional chicken has a lot of fat surrounded. And here, the stress-response hormone is about 9 times higher in Natural Farming. The one that beats stress. Oh, okay. So, if you look at the stress hormone, the natural farming, they have the...
